Fresh Ora King Salmon

This is now my second order of the whole Ora King Salmon, which the company promises to be 10 to 12 lbs. They weren't kidding. Mine came in today and it weighed in at 12.41 lb. That said, it's the finest, freshest salmon I've ever seen and it was perfectly cleaned (and I used to be a deckhand on a fishing boat in Redondo Beach, California when I was growing up). I'm now going to hang it in my Dry Ager for 14 days, so my wife and I can enjoy the greatest salmon in the world. The company also included a wonderful "free" gift (smoked black cod). Very generous and very much appreciated. This company is exceptional when it comes to the quality of its seafood.
