Utilize these tips to easily and efficiently access the uni tongues on Diver Caught Live Red Sea Urchins, despite the potentially challenging spiny shells.
  1. To prevent accidental stings, always wear gloves when carefully trimming the sharp ends of the spines. The gloves will also protect your hands from being stained by the sea urchin's dark exterior ink.
  2. The uni is suspended alongside the five points of the inner shell. To remove the top of the shell, use kitchen shears to carefully cut around the opening while keeping it facing upwards.
  3. Pour the internal liquid into a vessel, capturing any released appendages.
  4. Carefully place each tongue into a bowl of cold, salted water using tweezers or a spoon. Gently rinse and remove any debris that may have attached to the tongues.
